Directions:

  1. Heat oven to about 425°F. Arrange the rack in oven’s middle.

  2. Wash your chicken well and place it on cutting board. Dry it using paper towels. Cut off any additional fat it contains and throw it.

  3. Drizzle oil on chicken. Rub it on its skin and season it with pepper and salt. Place herbs and lemon in the cavity (if you are using it). Put it in a skillet with the breast side up.

  4. Roast it in oven for about 15 minutes. Reduce temperature to about 375°F. Roast it about 50 more minutes till juices become clear and when the thermometer shows the inside temperature at around 165°F.
